With bananas being out,  I went to the pantry of inspiration.  Pumpkin something has been sounding good lately so why not pumpkin oatmeal!

I made my usual oatmeal (I like it on the thin side, maybe 1/3 cup of oats to nearly 1 C of water!) and layered on the following:

  • 1/2 C of canned pumpkin (this was the sweetest tasting pumpkin in a can I think I have ever had!) left in an island shape.
  • Sprinkling of pecans
  • Sprinkling of chopped dates
  • sprinkling of pumpkin seeds (you must have them with their counterpart!)
  • Drizzle of Agave nectar

It really was creamy and great!  Now it’s time to get to my circuit from the earlier post.
